September is celebrated as National Nutrition Month, so why not indulge in something healthy and tasty with almonds, the nuts with many health benefits. Almonds are a natural source of many essential nutrients, including protein and healthy fats, making them a nutrient-rich snack that can help keep you going throughout the day. 

Celebrity chef and Master Chef India judge, Kunal Kapur shares quick recipes using these nutritive nuts. 

ALMOND AND HONEY FLAVOURED SRIKHAND
Ingredients
Hung yogurt……. - .1 ½ cup
Powdered sugar…….. - 2 tbsp
Almonds (toasted and crushed)…... - 3 tbsp
Honey…….. - 1 tbsp
Cinnamon powder………... - ½ tsp

Method
Blend yogurt and sugar and pour in small glasses
Fill half the glass and add toasted and crushed almonds 
Pour a little honey and a pinch of cinnamon 
Repeat the process again. Serve chilled

BADAM KA KAHWA
Ingredients
Green tea bags…..  - 2 nos
Almond slivers….. - 3 tbsp
Cardamom….. - 2
Cinnamon...  - 1 stick
Cloves…. - 2 nos 
Honey….. - 4 tsp
Kesar……. - 8 strands
Water....  - 5 cups

Method
Boil 5 cups of water. Add cardamom, cloves, cinnamon and kesar and simmer it for 3 minutes. 
Add honey and green tea bags. Remove from fire and allow to infuse for 2-3 minutes
Remove the tea bags and the spices using a tong
In cups add almond slivers and pour this hot refreshing tea

ALMOND PEARLS
Ingredients
Toasted almonds - ...60 gm
Blueberries…… - .10 gm
Oats……. - ..1 tbsp
Corn flakes…… - ..¼ cup
Olive oil... - as required 
Salt to taste
Curry leaves… - ….1 tsp
Mustard seeds - …….½ tsp
Cumin seeds…… - …..1 tsp
Red chilli powder - .1 tsp
Turmeric powder. - .½ tsp
Black pepper powder……… - ..½ tsp
Ajwain…… - …….½ tsp
Lemon juice……. - ..1 tsp

Method
Toast the oats in a dry pan for 2 minutes. Reserve and cool
Heat the oil, add the mustard, cumin and ajwain seeds 
Add the curry leaves 
Toss in oats, corn flakes and blueberries
Toast almonds in the same dry pan for a few minutes. Add the rest of the ingredients
Season with salt and spices
Finish with lemon juice and chopped coriander leaves.
